Thursday Thoughts and a Tasty Treat

Just because it's Thursday and my mind is full of nothing but randomness, that it what I'm sharing today.

-We took Emerson to the doctor today to get the rest of her 12 month shots. We left so suddenly back in May that she didn't get to finish all of her shots. She only had to get 2 today and she did great. I also got official measurements. She weighs 23 lbs 8 ozs and she is 32 inches tall. I was way off in my estimates on her height but pretty much right on with her weight. For a while she seemed kind of short to me but I think she has had a major growth spurt and she is now in the 90th percentile for her height and 55th percentile for her weight. Our sweet, growing girl!
I was trying to get a picture of her in her sweet little outfit before she left to go to the store with her Daddy. She thought he was leaving without her and it broke her little heart!
Luckily, all was well in her world again when she found out she got to go! That baby loves her Daddy!
-I'm not even going to post a word about my diet/exercise this week because it is embarrassing. Let's just say I've been a total slacker and leave it at that.

-How in the world is it already almost September? This year has just flown by, hasn't it? I feel like I need to get a move on with Halloween, Thanksgiving, and Christmas planning. Last year it totally snuck up on me and I just wasn't ready. 

-I'm looking to start a new Bible study. Either by myself or maybe with a few friends. Does anyone have any recommendations? I've heard that several of the Beth Moore studies are really good but I'm not sure where to start.

-A few mornings ago Jesse turned on the TV before he left for work. We usually let Emerson watch a little bit of Elmo or Signing Time a few times a week but other than that we try not to have it on when she is awake and this is why:

Y'all! Girlfriend was in a trance! I am not exaggerating when I say that she did not move from this spot for a good five minutes, even when I started snapping pictures. She would definitely be a TVaholic if we would let her!

-I was able to meet a few friends for dinner last night and it was SO nice to get out for a bit and have some girl time! We talked about anything and everything and it was just so much fun. I definitely need to do that more often.

-We've been doing really well with meal planning and eating at home. I've had fun trying some new recipes and I've definitely found a few new favorites. I missed Tasty Treat with Mallorie and Allie last Thursday so I wanted to share one of my new favorite recipes this week:



YOURNAME


This recipe (and the accompanying photo) is from Skinny Taste, one of my favorite recipe websites! If you haven't been there, go NOW! She has tons of delicious recipes with all of the nutrition information and Weight Watchers points. 


Crock Pot Chicken Taco Chili
Ingredients: 

  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
  • 1/4 cup chopped fresh cilantro
Directions: Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream. 
We put a little bit of avocado in ours and it was amazing! It makes a huge batch so we were able to eat it for several days. It was so good I can't wait to make it again. Yum!!

    She is too cute and love that outfit she had on. I just started (like a month ago) following along with the She Reads Truth Bible study. We are studying the book of Proverbs right now. You can join by downloading the YouVersion free Bible app and then following the She Reads Truth blog for the daily devotionals. It has helped me tremendously to have a plan to read and just taking a chapter a day. Hope you join in! I also enjoy reading books by Christian author Linda Dillow.

    Vince is the same way, he gets so mesmerized by the tv!

    That looks SO good! That picture of her crying because she thought her daddy had left is just pitiful! Sweet thing! So, I LOVE Beth Moore bible studies. I have done Esther and Believing God. I'm finishing up Kelly Minter's Study called Nehemiah right now and it is really good. I have a James workbook by Beth Moore and I also want to do crazy love by Francis chan if you are interested in either of those. I would love to do them with you!

    I can not believe how fast this yer has flown by!! And you mentioning all the upcoming holidays really makes it seem like the years almost over!! Crazy!! But I am really excited for fall, I'm ready for jeans and sweater weather!!!

    E's face in the sad picture is just precious!! And I am adding that recipe to our grocery list for the week, sounds delicious!

    I just started the Beth Moore Esther study this week on my own- if you're interested I can pause and we can do it together!

    OR there is a group of ladies that meet on Tuesdays on island and they break up into smaller groups and do different studies... I think they start back in a week or two. I'll try to find you the website and email it to you!

    Poor baby girl thought her Daddy was leaving her. She is growing so fast. Definately in the zone when she is watching her TV. Her outfit is too cute. Love you

    hey girl!! i would totally do a beth moore study with you if you wanted to! i've done a few of hers but would do any of them over again! it's been too long and i have the worst memory! could totally use a refresher! let me know and i know another girl who i think you would love and she would be interested too!! xo

    Henry will watch maybe 5-10 minutes of TV and then he's off doing something else. It might be handy if he would stand there for a whole show :) I could shower...when he's awake!

    Sometimes Wyatt does that trance into the tv as well, and I have to admit that sometimes, I just let him!! I gotta tell you, you motivated me with your urge to get fit again and I have lost 3 pounds!! So thank you!! Now if I can only keep it up! You'll be fine, you'll get back at it in no time!
